Recipes


All of us seem to dread with the fact that at least 3 to 4 times a week we actually have to cook. In a perfect world we would eat out everyday and our grandma's home cooked food would be on the menu but since that is not the case, I ask around and surf the Internet almost everyday to find recipes that not only look appealing but aren't so complicated and don't require ingredients from India lol. My ultimate goal is to feed my picky husband a good dinner that he enjoys and my family as well. I thought I would post some of the recipes I have made and have been easy, quick, and DELISH! Enjoy!

This first recipe my coworker Barbara gave to me. She's Italian and she gave me this recipe as an alternate to Alfredo, Pink or Red Sauce for pasta. It's Pesto. not only can you use pesto for any pasta she tells me, you can also use it as a topping while eating soup, tapas, burgers, tacos anything basically! lol So try it out you will be surprised how easy it is and how good it taste, I must warn you it will turn your pasta GREEN!




Ingredients

Pasta of choice-works best with spaghetti, or penne
2 packages of fresh Basil ( I get mine at Publix where the veggies are, there about 3 dollars each)
Vegetable Oil or Olive Oil (whichever you have at home works well)
Parmesan Cheese (the best is the one the sell by the deli where the specialty cheeses are)
Salt and Pepper
3 Cloves of Garlic, use 1 & 1/2 if you don't want it too spicy


Using a food processor, grind the basil, cloves of garlic salt and pepper.
Mix well then slowly add in Parmesan cheese and olive oil till liquefies.

Boil your pasta of choice, and then pour your pesto over it and stir.

Ready to serve!

My 26th Birthday


This birthday my hubby took me down to Sombrero Beach down in the Keys. We spent the day just relaxing. The perfect birthday gift along with some others :)
